Healing Pumpkin Coconut Soup

As the weather gets colder and our body adjusts to the changing seasons, this healing pumpkin coconut soup is sure to comfort your body & soul.

INGREDIENTS

2 cans 100% pumpkin puree (not pumpkin pie mix) OR 2 cups of steamed squash or sweet potato

2 cups vegetable stock

1 can coconut milk

1 Tbsp. date syrup (or sweetener)

1 medium yellow onion, chopped

3 cloves garlic, minced

1 Tbsp Kitchari Spice

1/2 tsp cinnamon

1 tsp sea salt

1/4 tsp of cayenne pepper or hot sauce if you like spicy!

DIRECTIONS

  1. Place all ingredients into your instant pot or pressure cooker.

  2. Cook on the soup/broth setting for 8 minutes. Let the pressure release naturally.

  3. Serve and enjoy!
