This Lemon blueberry load is moist, dense, and poppin with flavor. Ingredients are lowkey and accessible and the recipe is easy peasy!
INGREDIENTS:
2 eggs
1/4 cup white sugar
1/4 cup honey (*if no honey, use 1/3 cup white sugar instead)
1/2 cup olive oil (*sub equal amount any neutral oil or melted butter)
1/2 tsp vanilla
1/2 tbsp Golden Turmeric Powder
1 lemon
2 cup of flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup frozen blueberries
Milk
Powdered sugar
DIRECTIONS:
1. Preheat the oven to 350 degrees and line loaf pan with parchment paper (or oil)
2. In a large bowl whisk together eggs, sugar, honey, olive oil, vanilla, turmeric, and lemon juice
3. Once combined, add in flour, zest from the lemon, baking powder, baking soda, and salt
4. Mix until batter is formed
5. Gently fold in blueberries
6. Pour into the lined/oil loaf pan and bake for 45 mins
7. Allow to cool completely before removing from the pan
8. To make the glaze whisk together a little milk and a lot of powdered sugar until you reach the desired consistency
9. Pour over the cooled load and allow o set for a few minutes before cutting
