Vegan Chunky Tomato Basil Stew

Soothe your digestive system with this healing, hearty stew!


1/2 C organic tomato basil sauce (store-bought or homemade)

1/2 C organic pumpkin puree

1/4 C chopped carrots

1/2 C organic chickpeas (canned)

3 mini vegan sausage links

Can replace with more chickpeas, kidney beans, tofu.

1 tsp Kitchari Spice

1/4 C vegetable stock


  1. Mix all ingredients together in your instant pot or pressure cooker. You can cook on the stove top or in a slow cooker. Times differ!

  2. Set your pressure cooker to the “stew” setting and cook for 8 minutes.

  3. Let the pressure release naturally.

  4. Enjoy!
