Golden Turmeric Curry is a dinner staple and with spices like turmeric, ginger, and curry paste, this dish warms us up from the inside out.
INGREDIENTS:
onions
garlic
ginger
carrots
golden yukon Potatoes
@ThaiKitchen Red Curry Paste
2 cans coconut milk
lentils
Golden Turmeric powder
chopped kale
lime
white or brown rice
*can add any veggies you like to this curry
DIRECTIONS:
1. Sauté chopped onions, garlic and ginger
2. Add all the veggies and sauté for ~3 min
3. Add red curry paste and sauté for ~2 min
4. Add 1-2 cans of coconut milk, depending on you thickness preference
5. Add 1 tbs of Curcuma Golden Paste
6. Add 1 can of lentils Simmer for ~10-15 min until potatoes and carrots are soft
7. Add chopped kale
8. Remove from heat
9. Serve with cooked rice and a squeeze of lime
